Avocado Tuna Salad – Sugar Balance

INGREDIENTS
- 1 can tuna in water
- ½ cucumber sliced
- ½ medium avocados peeled,
- ½ small/medium red onion thinly sliced
- 1/4 cup cilantro (1/2 of a small bunch)
- 1 tbsp lemon juice freshly squeezed
- 1 tbsp extra virgin olive oil
- 1 tsp sea salt or to taste
- 1/8 tsp black pepper
INSTRUCTIONS
- In a large salad bowl, combine: sliced cucumber, sliced avocado, thinly sliced red onion, drained tuna, and 1/4 cup cilantro
- Drizzle salad ingredients with lemon juice, olive oil, salt and black pepper.
- Toss to combine.
