Curried Tuna Salad
INGREDIENTS
- 1 cans wild caught tuna
- ½ teaspoon curry powder, adjust to taste
- ¼ teaspoon salt
- 2 tbsp mayo
- ¼ red onion, finely diced
- 1 stalks celery, sliced
- 2 cups baby spinach or mixed greens
- Handful of cilantro, chopped
INSTRUCTIONS
- Mix everything together in a large bowl.
- Refrigerate for an hour.
- Serve over greens.
- Optional: serve with additional 1-2 stalks of celery cut into stick on the side.
