Curried Tuna Salad – Sugar Balance

Curried Tuna Salad

INGREDIENTS

  • 1 cans wild caught tuna
  • ½ teaspoon curry powder, adjust to taste
  • ¼ teaspoon salt
  • 2 tbsp mayo
  • ¼ red onion, finely diced
  • 1 stalks celery, sliced
  • 2 cups baby spinach or mixed greens 
  • Handful of cilantro, chopped

INSTRUCTIONS

  1. Mix everything together in a large bowl.
  2. Refrigerate for an hour.
  3. Serve over greens.
  4. Optional: serve with additional 1-2 stalks of celery cut into stick on the side.
