Transfer the cauliflower to a food processor and pulse until completely broken down. It should be processed until it looks like pieces of rice.
In a non-stick frying pan over medium heat, add water, processed cauliflower, chopped onions, curry powder, and a pinch of salt. Mix thoroughly and let cook for 3-5 minutes.
Fry eggs sunny side up, until cooked to your preferred consistency.
Remove pan from heat and cover.
Serve cauliflower on a plate with fried eggs on top.
