Green Breakfast Omelet

INGREDIENTS

  • 2 large eggs (preferably organic)
  • ½ zucchini, sliced
  • 2 cup spinach
  • 1 sprig fresh basil
  • ½ avocado
  • Salt & pepper to taste

INSTRUCTIONS:

  1. Beat eggs, salt & pepper, in a small bowl until blended.
  2. Chop spinach, zucchini, basil into fine pieces. Mix into egg.
  3. Pour egg mixture into non-stick frying pan and cook over medium heat.
  4. Once eggs are thoroughly cooked, fold in half to make an omelet.
  5. Serve with sliced avocado on the side (or put it inside before you fold if you like!).
