INGREDIENTS
- 2 large eggs (preferably organic)
- ½ zucchini, sliced
- 2 cup spinach
- 1 sprig fresh basil
- ½ avocado
- Salt & pepper to taste
INSTRUCTIONS:
- Beat eggs, salt & pepper, in a small bowl until blended.
- Chop spinach, zucchini, basil into fine pieces. Mix into egg.
- Pour egg mixture into non-stick frying pan and cook over medium heat.
- Once eggs are thoroughly cooked, fold in half to make an omelet.
- Serve with sliced avocado on the side (or put it inside before you fold if you like!).
