Grilled Chicken Salad – Sugar Balance

INGREDIENTS
- 1-2 pieces of lean chicken breast
- 6 cups chopped cucumbers
- 2 cups chopped cherry tomatoes
- 1 garlic clove, finely minced
- 1 tbsp. chopped dill
- 3 tbsp. vinegar or fresh lemon juice
- Sea salt & pepper to taste
INSTRUCTIONS
- Finely mince garlic and add to a small bowl along with vinegar, dill, salt and pepper.
- Add in chopped tomatoes and cucumbers. Mix thoroughly.
- Preheat a non-stick skillet to medium high.
- Season chicken with salt and pepper.
- Grill the chicken with a little bit of water, moving it often so it doesn’t stick.
- Place sliced chicken on a plate with cucumber-tomato salad.
