Rainbow Omelet

INGREDIENTS
- 2 large eggs (preferably organic)
- 2 large tomatoes
- 2 cup spinach
- 1 red pepper
- Salt & pepper to taste
INSTRUCTIONS
- Beat eggs, water, salt, and pepper in a small bowl until blended.
- Chop spinach and red pepper into fine pieces. Mix into egg.
- Pour egg mixture into non-stick frying pan and cook over medium heat.
- While eggs are cooking, slice and salt tomatoes.
- Once eggs are thoroughly cooked, fold in half to make an omelet.
