Salmon & Cucumber – Sugar Balance

INGREDIENTS
- 1-2 salmon filet (preferably ocean caught)
- 3 cups of sliced cucumbers
- 2 tablespoons white or apple cider vinegar
- 1 teaspoon chopped dill
- Salt and pepper to taste
INSTRUCTIONS
- Preheat oven to 450°F.
- Season salmon with salt and pepper. Place skin side down on a non-stick baking sheet or pan with ovenproof handle.
- Bake until salmon is cooked through, about 12-15 minutes.
- While salmon is cooking, chop cucumber and place in mixing boil.
- Sprinkle with salt, chopped dill, and vinegar, and mix thoroughly.
- Serve on plate and enjoy.
