Sizzling Salmon Cakes on Salad

INGREDIENTS

  • 1 can pink salmon
  • 1 egg
  • ¼ cup onion
  • ¼ tsp black pepper
  • ¾ tbsp olive oil
  • 2 cups mixed greens
  • 1 cup lettuce, chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp mayonnaise (optional)
  • Fresh dill (optional)

INSTRUCTIONS

  1. Pick through the salmon and remove any bones. In a mixing bowl, beat the eggs and add the diced onion, salmon and pepper. Mix thoroughly.
  2. Shape into 2 ounce patties; 8 patties. In a large skillet over medium heat, heat the oil. Fry each patty for 5 minutes on each side or until crispy and golden brown.
  3. In a small bowl mix dressing: lemon juice and olive oil; season with salt and pepper. Toss mixed greens and chopped lettuce with dressing
  4. Serve salmon cakes on top of salad
