INGREDIENTS
- 2 large eggs (preferably organic)
- 3 cups asparagus
- Salt & pepper to taste
INSTRUCTIONS
- Wash asparagus thoroughly and cut off the tough ends.
- Place asparagus in cast-iron frying pan or Pyrex glass cooking sheet and sprinkle with salt.
- Roast asparagus on the top rack of your oven at 450°F for 7-10 minutes.
- While asparagus is cooking, crack two eggs into a non-stick frying pan and cook on medium heat until eggs are cooked.
- Serve on plate and sprinkle with salt and pepper to taste.
