Turkey Salad – Sugar Balance

Turkey Salad

INGREDIENTS

  • 1 cup chopped turkey, cooked (light or dark meat)
  • 1 cup mixed greens
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • 1 bell pepper
  • Salt and pepper to taste

INSTRUCTIONS

  1. Put seasonings, lemon juice, turkey, and mayo in a bowl. Mix well.
  2. Slice bell pepper into strips
  3. Serve turkey mix on top of mixed greens; eat sliced pepper on side (or shred on top if you like!)
