Zucchini, Tomato & Basil Omelet – Sugar Balance

INGREDIENTS
- 1/2 tsp. olive oil
- 1/2 cup zucchini, diced
- 1/2 cup tomatoes, diced
- 2 tbsp. basil
- 2 eggs
- ½ avocado
- Salt and pepper
INSTRUCTIONS
- Beat eggs, salt & pepper, in a small bowl until blended.
- Chop zucchini, basil and tomatoes.
- Fry vegetables lightly on pan until zucchi becomes tender or to desired firmness. Remove vegetable mix from pan.
- Pour egg mixture into frying pan and cook over medium heat.
- Once eggs are thoroughly cooked, plate and put vegetable mix into the omelet and fold in half.
- Serve with sliced avocado on the side (or put it inside before you fold if you like!)
