Zucchini, Tomato & Basil Omelet

INGREDIENTS

  • 1/2 tsp. olive oil
  • 1/2 cup zucchini, diced
  • 1/2 cup tomatoes, diced
  • 2 tbsp. basil
  • 2 eggs
  • ½ avocado
  • Salt and pepper

INSTRUCTIONS

  1. Beat eggs, salt & pepper, in a small bowl until blended.
  2. Chop zucchini, basil and tomatoes.
  3. Fry vegetables lightly on pan until zucchi becomes tender or to desired firmness. Remove vegetable mix from pan.
  4. Pour egg mixture into frying pan and cook over medium heat.
  5. Once eggs are thoroughly cooked, plate and put vegetable mix into the omelet and fold in half.
  6. Serve with sliced avocado on the side (or put it inside before you fold if you like!)
